Our West Loop production brewery (1800 W Walnut St) is where we package cans and fill kegs for distribution. We designed a space that would not only produce the highest quality and most consistent product but also streamline our daily operations. We invested in equipment that we could rely on and be proud of for years to come. To achieve this, we partnered with Quality Tank Solutions (QTS) from Wisconsin, a company renowned for its unparalleled dedication to quality. Their American-made stainless steel brewhouses, fermenters, and brite tanks have been a perfect fit for our vision. QTS collaborated with us to create a custom brewhouse tailored to the unique beers we’ve been crafting for over eight years.

Our Cutting-Edge Brewing Equipment
Our production begins with a state-of-the-art, semi-automated 4 Vessel 30-barrel brewhouse, featuring a double kettle/whirlpool. This setup is ideal for our Kettle Sours and long-boil Stouts. We’ve incorporated a chill-in-tube feature that efficiently cools wort for hop stands in our Hazy IPAs and quickly chills wort for our kettle-souring process. The system also includes a grain crushing system, grist case, chain disc system, and an automated grain-out feature. This automation allows our brewers to program each beer for consistency while minimizing the physical effort and manual labor typical of older systems.

Advanced Cellar and Packaging Technology
Our cellar operations are managed through a mounted touchscreen system that allows us to take notes and adjust fermenting beer temperatures with ease. These adjustments can even be made remotely via smartphone, providing us with the flexibility to monitor and control the process from anywhere. For packaging, we selected Wild Goose packaging equipment, along with a SKA de-palletizer and conveyance system.
